it’s May and it's time for elderflower
syrup,
on the internet there are
many different recipes and recommendations on how to make the perfect syrup,
this below is a recipe I
got from my neighbor many years ago,
I changed a little according
to the taste of my children,
and I used to make it every year.
we need:
5 liters of water
40 - 50 large flowers (if they are small increase amount or if it was a lot of rain and
washed the pollen)
10 g citric acid, a lemon substitution
1 pouch of 5 g preservative
3 kg of sugar
Preparation:
1.take out green leaves,
little dry flowers and bugs from flowers,
2.immerse them in water
(ordinary tap water or use bottled if you wish),
3.store in a cold place to
rest for at least 24 h,
4.strain through cheesecloth,
wring well the flowers,
5.add sugar,
6.citric acid,
7.in a little warm syrup

9.close with wet cellophane over which you twisted the lid.

koji sam ja dobila od moje komšinice pre puno godina,
malo ga izmenila prema ukusu
moje dece i
sada ga tako pravim svake
godine.
potrebno je:
5 l vode
40 - 50 velikih cvetova zove
(ako su mali povećajte količinu ili ako je palo puno kiše i spralo polen)
10 dkg limuntusa
1 konzervans od 5 gr
3 kg šećera
priprema:
1.poskidajte zelene listiće, suve cvetiće i bube sa cvetova

2.potopite ih u vodu (običnu sa česme, ili ako koristite
flaširanu)
3.spremite na hladno mesto da odstoji minimum 24 h
4.procedite kroz gazu, dobro iscedite cvetove
5.dodajte šećer,
6.limuntus
7.zagrejte malo sirupa i u njemu rastvorite konzervans, dodajte u
masu
8.kad se šećer otopio sipajte u staklene flaše
9.zatvorite mokrim celofanom preko koga ste zavrnuli poklopac
